Savoury Rice





Ingredients

  • 1 onion
  • 1 clove garlic
  • 3 mushrooms
  • Small pepper – any colour
  • 1 tomato
  • 1 tablespoon oil
  • 150g long grain rice
  • 550ml water, boiling
  • 1/2 vegetable stock cube
  • 50g peas
  • 1/2 tablespoon paprika

Method

1. Dissolve the ½ stock cube in the boiling water using a fork to stir.

2. Prepare the vegetables:

3. Peel and chop the onion and peel and crush the garlic;

4. Slice the mushrooms; chop the red pepper and tomato into small chunks     

5. Fry the onion and garlic in 1 tablespoon oil on medium for 3 minutes until soft.

6. Add the mushrooms and red pepper to the pan and cook for a further 2 minutes.

7. Stir in the rice.

8. Add the hot stock, peas and paprika.

9. Put back on the hob and simmer for 15 minutes, until the rice is cooked and the water has been absorbed.

10. To serve place the rice in a bowl and sprinkle the chopped tomato on top
