Meat Free Chilli





Ingredients

Serves 4

  • Drop of oil
  • 1 Onion chopped
  • 1 Cloves of garlic, finely chopped
  • 1 tsp chilli powder (depends on strength)
  • 300g Soya mince
  • 1 large tins of chopped tomatoes
  • 1 carrot grated
  • 2 tbsp tomato puree
  • 200ml vegetable stock
  • 400g tin of kidney beans drained
  • Salt and Ground Pepper

Equipment: pan, spoon to use in pan, teaspoon, tablespoon, chopping board, sharp knife, tin opener, grater, measuring jug.







Hints & Tips

With your chilli you can serve with . . .

  • Rice
  • Pitta bread
  • Grated cheese
  • nachos
  • Sour cream - to help if its really hot

Method

  1. Chop the onion and crush the garlic
  2. Heat oil in pan and gently soften onion and garlic
  3. Add chilli powder, cook for 1 minute.
  4. Add soya mince (break up with spoon) and cook for 2-3 minutes
  5. Add chopped tomatoes, tomato puree, stock and carrot and bring to the boil
  6. Simmer gently for 10 minutes
  7. Add kidney beans and salt and pepper and cook for a further 10 mins
  8. Serve.
