Pumpkin Stew





Ingredients

2 teaspoons oil

1 onion, sliced

2 garlic cloves

1/2 tsp red chilli flakes

2 teaspoons ground cumin

2 teaspoons corriander seeds

2 fingers worth root ginger peeled and grated

3 tablespoons tomato puree

600 g pumpkin peeled and chopped to same size

400g tin tomatoes

1 stock cube

250g puy lentils (pouch easiest)

1 bay leaf

Hints & Tips

Method

Heat the oil in frying pan for slow cooker or if cooking on the hob large pan

Add the onion and soften

Add the garlic and fry until softened

Add chilli flakes, corriander seeds, ginger, tomato puree and stir for a couple of minutes. 

 put in the slow cooker if using

add all the other ingredients except lentil pouch

Cook for 6 hours on low heat in the slow cooker or 1 hours on the hob on low heat 

Season to taste
