Chicken Mexico





Ingredients

Serves 4

  • 4-8 Chicken thighs or 4 Chicken breasts
  • 2 Tablespoons Oil
  • 2 Cloves Garlic
  • 1 Green Pepper
  • 1 Red Chilli
  • 1 Tin Tomatoes
  • 3 Tablespoons Tomato puree or 1 Tin Tomatoes
  • 20 Tablespoons (300ml) Stock
  • 1 Small tin Sweetcorn
  • 4 Tablespoons Sour cream or yogurt
  • 1/2 Box (125g) Mushrooms 

Hints & Tips

If you want to bulk it out further add grated carrot

Serve with rice, pasta or potatoes. 

Mix any leftovers with rice and eat in a wrap for a spicy burrito!

The red chilli can be replaced with 1 teaspoon of chilli powder, added to the onions when cooking in the pan

Method

  1. Chop the onions, garlic, pepper and chilli
  2. Heat 1 tablespoon of the oil in a frying pan and cook the onion, garlic until softened
  3. Add to the slow cooker
  4. Add the tinned tomatoes, tomato puree and stock
  5. Add bay leaf
  6. Cook on low for 5-6 hours until the chicken is tender and cooked through
  7. In the final 30 minutes, add the sweetcorn and mushrooms
  8. Add salt and pepper to taste
  9. Stir in sour cream or yogurt just before serving
